Mexico!
We were lucky enough to be invited to celebrate Rosy and Anthony's wedding with them in Mazatlan, Mexico in mid December.
They celebrated a very traditional mass at the cathedral in the city center and then had a reception at the Hotel Emporio, which was also where all the out-of-town guests stayed. We can very highly recommend this place so long as you like music at all hours (or sleep with earplugs) -- if there wasn't a live band playing for a party or wedding reception, or a brass band playing on the beach, then the stereo at the bar was pumping. That generally wrapped up just in time for the bar across the street to get started. There was usually a quiet period between 4 am and 9 am.
N: We took a lot of walks on the beach, checking out the sand and waves and pelicans, and the guys digging for treasure outside the Ramada.

N&A: As you can see, Mazatlan is a sort of medium-sized city -- fairly urban, so it was pretty crazy to take this 10 minute boad ride and end up at Isla de la Piedra
No paved road, just a tiny town, a strip of palapas (restaurants with coconut-thatched roofs) and then only beach and coconut plantations as far as the eye can see
Before you decide to retire here, note that there were also lots of ATV's and horses on the beach as the day progressed.

N: And then I had a good time dancing at the reception.
N: So did Papa!
A: You don't get to do this in Boise in December!
A: Shrimp is pretty good, especially dipped in lime juice and coarse salt.

El Centro Mercado. Here you can get just about anything -- from cheesy souvenirs, to delicious fruit smoothies, cool artisan stuff, any fruit or vegetable, even a whole pig's head (!)
